500 G Couscous
625 ML Filtered Water
450 G Butternut or Jap pumpkin, peeled and cubed
400 G Sweet Potato, peeled and cubed
250 G sliced beans, top and tailed
Pinch sea salt
1 tble spn cumin
2 tspn cinnamon
½ tsp turmeric
Place pumpkin and sweet potato in pan covered with filtered water and bring to boil, reduce heat and simmer for 5 mins. Add beans and cook a further 2-3 mins.
Meanwhile, in a separate pan, bring water and spices to boil over medium heat, stir in the couscous and cook for approx 5 mins till absorbed and fluff with a fork.
Drain the vegetables and stir through the couscous.
Peas, corn or carrot and snow peas may be used alternatively.
