This recipe uses a food processor. Although I haven't made it without using one I imagine it can be done. Wonderful way to utilize all those extra zucchini you have in your vegetable garden. Freezes well and a great, healthy snack.

Ingredients
1 cup walnuts (optional)
1 medium zucchini, cut to fit food chute
1/2 c vegetable oil
1 c sugar
2 eggs
2 t vanilla
1/2 t baking soda
3/4 t cinnamon
1/2 t salt
1/4 t baking powder
1 1/2 c all-purpose flour
Method
Preheat oven to 350 degrees. Position disc in food processor bowl with slicing side up. Slice walnuts. Set aside. Position disc with shredding side up. Shred zucchini. (You should have about 1 1/2 cups of zucchini.) Set aside. Position knife blad in bowl. Add oil, sugar, eggs, vanilla, baking soda, cinnamon, salt and baking powder. Process to mix, about 15 seconds. Add flour to bowl. Pulse 2-3 times to mix, Stop and scrape down sides of bowl. Pulse 1-2 more times. Remove knife blade. Add nuts and zucchini; stir in by hand. Pour batter into a greased and floured 9" by 5" loaf pan. Bake until loaf tests done, about 1 1/4 hours.
You can easily double this recipe and make 3-4 smaller loaves using the small foil loaf pans you can find in the supermarket. They make great gifts. You can also freeze this for later use. Freezes really well.
