1 lb box pasta (I flip flop between using macaroni, rotini & shells -- works well with any of them)
~ 1 T olive oil
1 pkg Hidden Valley Ranch Salad Dressing & Seasoning Mix
1 c milk (to make dressing)
1 c mayonnaise (to make dressing)
1 cucumber, peeled & chopped
1 large tomato, chopped OR I've used a bunch of cherry or grape tomatoes -- those I put in whole
Salt to taste
Cook the pasta according to the package directions, rinse, drain & put in large mixing bowl. I usually toss it with about 1 T olive oil so that it doesn't stick while I'm prepping the other ingredients.
Mix the salad dressing mix according to the package directions. Pour about 1/2 of the salad dressing over the pasta & stir.
Add the tomatoes & cucumbers. Pour about 1/4 more of the salad dressing mix over that & lightly stir.
Cover & place in refrigerator for a few hours. I usually keep the last 1/4 of the salad dressing mix & add a little more right before I serve the pasta salad again.
