Healthy Banana Chocolate Chip Muffins

A semi -healthy but tasty alternative to the usual banana muffins.

Ingredients

1/3 c. applesauce (instead of oil)
1/2 c. sugar
1 egg
4 small very ripe bananas mashed
1 c. semi-sweet choc chips (or peanut butter chips are great in combination with the chocolate!)
1/4 c. additional choc chips (optional)
1 c. Nutriblend flour (or whole wheat)
1/4 c. wheat germ
1/2 tsp salt
1 tsp baking soda
1 tsp vanilla
1/2 tsp cinnamon

Method

Whisk the applesauce, sugar and egg together.
Stir in mashed bananas and vanilla.
In a seperate bowl, mix the flour, wheat germ, salt, baking soda and cinnamon together.
Add to the wet ingredients and stir until just moistened.
Add choc chips.
Spoon into greased or paper lined muffin cups (or I use a mini loaf tray that makes 8 mini loaves instead of 12 muffins)
Sprinkle the 1/4 additional choc chips on the top of each muffin.(optional)
Bake @ 400F for ~ 9 minutes (until they have risen and gotten brown). Then reduce the temperature to 350F and bake for an additionl 5-10 min (until toothpick comes out clean)

*note: to make into a banana loaf instead of muffins, grease a loaf pan and pour batter in. Bake at 325 F for about an hour until toothpick comes out clean.
