Asian Noodle Salad

Ingredients

500g fine spaghetti
2 cups grated carrot
snow peas shredded or beans
bean sprouts
1/3 cup fish sauce
¼ cup olive oil
2 tblspns soy sauce
juice of 2 lemons or limes
1 chilli finely chopped
½ cup coriander
½ cup mint
plus a little sugar
toss over pine nuts or cashews

Method

Cook pasta until al dente – drain and set aside
Mix fish sauce, olive oil, soy sauce, lemon/lime juice, chilli and sugar together. Then add the coriander and mint – blend.
In a separate bowl, mix the pasta, carrot, snow peas/beans and bean spouts together. Then pour in the sauce mixture. Combine well. Toss over nuts and vola!
