3 Large bananas
1/2 C. maple syrup
1/2 C. Soymilk
1/4 C. Vegetable Oil
2 C. Whole Wheat Pastry Flour
1/2 t. Baking Soda
1/2 t. Baking Powder
Pinch of Salt
1/2 t. Nutmeg (preferable fresh ground)
1 t. cinnamon
1 t. Vanilla Extract
1/4-1/2 C. Coarsely Chopped Nuts (Walnuts or Pecans are best)
1/4 C. Finely chopped nuts
1/4 - 1/3 C. Brown Sugar
1-2 T. Oil
Preheat oven to 350 degrees Farenheit.
Mix wet ingredients in large bowl. Mix dry ingredients in a medium bowl well then add to wet ingredients. Mix until just combined (over mixing causes air bubbles) then add nuts.
Pour batter into a greased and floured loaf pan.
For Optional Topping:
Add fine nuts, brown sugar, and oil into a small bowl and combine until evenly mixed. Texture should be moist, yet crumbly. Adjust ingredients accordingly.
Sprinkle on top of batter in loaf pan evenly. This makes a tasty crust for the bread... Mmm Mmm!
Put loaf pan into preheated oven and cook for about an hour. It will be done when a knife poked in the center comes out clean (i.e. no batter left uncooked)
Let cool for 15 minutes, if you can stand it, then remove from pan, slice and serve with freshly brewed coffee or tea to friends and/or roommates.
