Dinner for one small and one large appetite. Approximate quantities.
1 lb chicken breast (skinless, boneless)
1 medium tomato
1/3 red/vidalia onion
1/2 small cucumber (peeled)
calamata olives from a deli (about 1/3 cup)
8 oz feta cheese (use 1/2-3/4)
salt and pepper
1 tbsp olive oil
pita pockets (3, or 1 packet for this meal and more)
Oil a skillet with 1 tbsp olive oil (or less). Salt and pepper chicken breast and lay in pan. Juice 1 lemon over the chicken, cover, and cook.
While the chicken is cooking, chop tomato, onion, and cucumber. Crumble feta. Warm pita pockets, if you like.
When the chicken is cooked, chop into smaller pieces and distribute a portion into each pita pocket. Add to each pocket feta, olives, cucumber, tomato, onion, and a serving of tzatziki.
