Mango Chutney Shrimp & Spinach

Officially my favorite dinner. Just the right blend of flavours and not a hot-spicy dish (I can't do hot spices ;)

Ingredients

1 lb raw shrimp, peeled
2 cups baby spinach

3 tbsp mango chutney
1/4 cup lime juice
1 1/2 tsp paprika
1 tsp ground cumin
1 tsp ground coriander
4 garlic cloves
1" gingerroot

rice for serving

Method

Dry-roast the paprika, cumin and coriander in a large pan for about 4 minutes. Mix all these spices and all sauce ingredients together in a bowl. Pour shrimp and sauce back into the large pan and cook on medium-high about 4 minutes. Add spinach and cook about another 4 minutes, stirring/tossing so that all shrimp and spinach get cooked. Serve with rice.
