Turkey Meatloaf

Meatloaf made with turkey, no beef. It really does taste good.

Cooking time:

Ingredients

1 ½ tsp olive oil
1 onion, finely chopped
½ cup finely chopped red pepper
2 slices whole wheat bread, torn into small pieces
1/3 cup 1% milk
1 large egg
12 oz ground turkey breast
4 oz sweet Italian turkey sausage (approx 1 sausage) casing removed
2 tsp poultry seasoning
¼ tsp salt
¼ tsp pepper
3 tbsp ketchup

Method

Preheat oven to 350 degrees Fahrenheit. Coat 9x9 baking dish with cooking spray.
Heat oil in skillet over medium heat. Add onion and pepper and cook, stirring often, until tender, about 6 minutes. Remove from heat.

Meanwhile put bread in large bowl. With fork stir in milk and egg. Let stand for 5 minutes, until softened, then mash the bread with the fork.

Add the turkey, sausage, poultry seasoning, salt, black pepper and the onions and peppers. Mix gently until just blended. (mixture will be soft).

Shape into a free-form loaf in the pan. Spoon ketchup on top gently with a knife.

Bake for 60 to 70 minutes, or until thermometer registers 170 in the centre. Cool before slicing.
