Cucumber Salad

Nice for on a hot day. The reicpe says serves 2 these must be really hungry people even if it's all they are eating. If serving as a side for 2 only make half because this is not recomended for leftovers. It does separate after a while.

Ingredients

4 cucumbers (peeled, cut in half lengthwise and then thin slice)
1 cup nonfat plain yogurt
10 drops liquid stevia
2 cloves fresh garlic (peeled and diced)
1 tbs. Flax Seed Oil, I've even used ground flax seed to get the nutty flavour
1 green onion (chopped)

Method

Place all ingredients in a bowl and stir together until lightly mixed. Place in the refrigerator and chill for an hour, then serve.
