Ingredients

3kg ripe tomatoes;1cucumber peeled and deseeded;2red peppers;1head celery;1small onion;4cloves garlic;6 slices white bread-crusts removed;3tblsp sugar;250ml extra virgin olive oil;2 tblsp balsamic vinegar;200g toasted whole almonds;salt/peppermill;1l tomato juice

Method

-roughly chop all ingredients and mix together
-leave to marinate overnight in fridge
-liquidise the next day
