Roasted Beets and Sauteed Beet Greens

Fresh beets roasted with garlic, onions and seasoned with oregano. Save the stems and greens! Sautee them with garlic, olive oil and parmesan cheese.

Ingredients

fresh beets with greens, mine had about 6 good size beets
6 cloves of garlic
salt and pepper
1 vidalia onion sliced
1t dried oregano or about 3t fresh
olive oil
2t fresh, finely grated parmesan cheese
lemon juice

Method

For Roasted Beets:
-preheat barbeque or oven 400 degrees F
-spray a foil pie plate with cooking spray
-cuts stems off of beets and put aside, wash beets and cut into quarters.
-place beets, 4 cloves of garlic (either whole or cut in large pieces), all of the onion slices in pie plate
-sprinkle with salt, pepper and oregano
-drizzle with olive oil
-cover pie plate with foil wrap and place on barbeque or in oven
-roast until beets are tender, mine took about 25 mins on my barbeque

For Beet Greens
-boil stems and greens in salted water until tender
-heat a few tablespoons of olive oil in a large pan
-finely chop garlic and add to pan
-drain the stems and greens and add to pan
-sprinkle with salt, pepper and lemon juice
-sautee until very tender and soft
-sprinkle with parmesan cheese and allow to melt in pan, this only takes a minute or so
