Strawberry Ice Cream

Delicious ice cream made without an ice cream maker. Instead of strawberries, you can use blueberries or peaches.

Serves: 2 quarts
Difficulty: Easy - for beginners

Preparation time:

Ingredients

2-3 cups strawberries mashed
2 cups whipping cream
1 1/4 cups sweetened condensed milk (see below for recipe)
1 cup cold water
6 tablespoons sugar
1/2 teaspoon vanilla
1/4 teaspoon salt

Sweetened Condensed Milk (yields about 1 1/4 cups = 1 can)
1 cup dry milk powder
2/3 cup sugar
1/3 cup boiling water
Combine in blender and blend until smooth. Refrigerate 24 hours to thicken.

Method

Chill all ingredients. In mixing bowl, beat all iingredients together with an electric mixer. Pour into a 9 x 13-inch pan and freeze until mushy (about 3 hours). Remove from freezer and return to mixing bowl. Beat until smooth but not melted. Return to pan and freeze another 3 hours.
