Jane's Middle Eastern Bean Salad

Ingredients

1 16 oz can black beans – rinsed and drained

1 12 oz can of yellow corn – rinsed and drained

1 large clove garlic – pressed

½ red onion – diced

1 medium green pepper - diced

1 medium red pepper - diced

1 small orange pepper – diced



2 tablesp. apple cider vinegar

Black pepper

1 teasp. cumin

3 tablesp. olive oil

2 tablesp. chopped parsley

3-4 tablesp. chopped mint

Method

Mix the first 7 ingredients.

Chop the parsley and mint finely and add to the mixture

In a jar, mix the vinegar, pepper and cumin.

Add the oil and mix well

Pour over the salad and leave for an hour before serving.
