Chipotle Salsa

Spicy Salsa

Ingredients

1 can Rotel tomatoes (with juice)
1 can stewed tomatoes (with juice)
1/2 purple onion, finely chopped
1 clove garlic, diced
1 lime, squeezed
1 jalapeno pepper, seeds removed, chopped
1 chipotle pepper, seeds removed, chopped
fresh cilantro, diced
2 tbsp. sugar
1 tsp. cumin
1 tsp. sea salt, ground

Method

Combine all ingredients in a food processor and pulse until almost creamy. Stir in salt and sugar to taste. Pour into serving bowl. Let sit for a minimum of 1 hour in refrigerator. Serve.

You can add chopped mangos, cantelope, or pineapple for a spicy fruit salsa.
