Melt butter, cocoa, orange juice, and coffee on stove to mix. When melted, put in mixer and add:
sugar and cream cheese (or ricotta).
Mix until smooth (no lumps of cheese).
Combine remaining dry ingredients and add to wet in mixer. Batter will be VERY runny.
Pour into bunt pan and bake at 350 degrees for 50 minutes. Allow cake to cool for 20 minutes before removing from pan (pan can be placed in freezer to speed cooling) or it will stick to the pan and break the cake. Which sucks.
Pour into 13 x 9 inch pan and bake for approx 25 minutes (or until toothpick inserted into cake comes out clean.
