1tbs caster sugar
600ml carton low-fat custard
170g can passionfruit
1/4 cup icing sugar, sifted
finely grated zest 1 lemon
4 egg whites
icing sugar, for dusting
1. Preheat oven to moderately hot, 190'C. Lightly spray 6 x 1-cup souffle dishes with oil. Place on a baking tray. Sprinkle insides of dishes with sugar.
2. In a large bowl, combine custard, passionfruit, icing sugar & zest.
3. In a different bowl, using an electric mixer, beat egg whites until stiff peaks form. Fold lightly into custard mixture.
4. Spoon mixture evenly into dishes. Bake for 10-15mins or until puffed, the serve.
