Leek & Potato Pizza with Mint

Ingredients

1 ready-made plain pizza base
2tbs extra virgin olive oil
1 large leek, cut diagonally into 1cm slices
1 large desiree potato, cut into 0.5cm slices
1tbs mint leaves

GARLIC OIL:
2 garlic cloves, peeled
2tbs extra virgin olive oil

Method

1. Preheat oven to 240'C. Place pizza base on a baking paper-lined baking tray.

2. Make Garlic Oil by pounding garlic in a mortar & pestle until pureed. Gradually stir in olive oil & set aside.

3. Heat oil in a non-stick frying pan on medium. Saute leek & potato for 10mins, until potato is tender & most of leek liquid has evaporated. Season to taste & cool slightly.

4. Spread Garlic Oil over pizza base, top with hleek mixture & mint leaves. Bake for 15mins, until crisp. Slice & serve.
