4 large chicken thighs, bone in, skin still on
2.5cm piece ginger, peeled & grated
2 cloves garlic, peeled & grated
zest & juice of 2 limes
1tbs runny honey
2tbs soy sauce
1 red chilli, de-seeded & finely sliced
4 spring onions, finely sliced
fresh coriander, choppedm to serve
1. Preheat oven to high - 200'C.
2. Mix all the ingredients together in a bowl except the chilli, onions & coriander; then place in a baking dish. Bake in the oven for 25-30mins, turning once or twice until cooked through & dark, sticky & crispy.
3. Scatter with chilli, spring onions & coriander and serve with plain steamed rice.
