Pumpkin Muffins

Oh so moist and delicious! YUM!

Serves: 2 1/2 dozen

Ingredients

4 eggs
2 cups sugar
1 1/2 cups oil
14 ounce can pumpkin
3 cups flour
2 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt

Method

Preheat oven to 400*

Beat eggs, sugar, oil, and pumpkin together thoroughly.

Stir flour, cinnamon, nutmeg, baking soda, baking powder, and salt together thoroughly & add to above. Blend until smooth.

Fill each greased muffin tin 2/3 full, bake 15 min.

If desired, frost when cool with cream cheese frosting. Double-YUM!
