Healthy Peanut Butter Cups Recipe:

Difficulty: Easy - for beginners

Ingredients

6 tablespoons coconut oil

6 tablespoons cacoa powder

2 tablespoons water

6 full droppers full Vanilla Creme Stevia

1 teaspoon cinnamon (optional)

1/4 cup organic peanut butter or Walden Farms zero calorie peanut spread

2 tablespoons coconut shavings (or you can top it with your choice of goji berries, cacao nibs, almonds or whatever else your heart desires)

*You will need mini metal muffin tins or a muffin tin.

Method

Melt the coconut oil in a bowl in microwave for about 30 seconds. Combine with cacoa powder, then add water and Vanilla Creme Stevia.

Prepare the mini metal muffin tins or a muffin tin with foil.

Fill each mini metal muffin tins or muffin tin with a little bit of chocolate mixture, coat enough on the bottom and rub it around. Be sure to just use half of the chocolate mix, otherwise you will need to prepare more. Then place the mini muffin metal tins or muffin tin in the freezer for 5-10 minutes or until firm. Once firm, divvy up the peanut butter evenly between each chocolate cup and then top and coat with the remaining chocolate mix. Place back in freezer until firm for about 10 minutes.

Store in fridge or freezer. Because of the nature of coconut oil, it will eventually melt at room temperature so make sure it stays in the cold air. Enjoy these tasty treats! Happy Holidays!
