4 tablespoons packed brown sugar
2 tablespoons dry Cajun seasoning
4 pound beef brisket
1 can diced tomatoes with juices
½ cup ketchup
¼ cup apple cider vinegar
1 onion, sliced
2 tablespoons canola oil


Preheat oven to 325 degrees. Combine 2 tablespoons brown sugar and Cajun seasoning rub over both sides of brisket. Combine remaining brown sugar with tomatoes and their juices, ketchup and vinegar; reserve. In flameproof roasting pan heat oil over medium-high heat. Add brisket; cook, turning once until browned, 2 to 3 minutes per side. Sprinkle onion around brisket. Pour tomato mixture over meat; cover with foil. Bake until very tender, 2½ to 3 hours. Transfer brisket to serving platter. Place pan with juices over two burners on high heat. Bring to boil; cook, stirring until reduced by ¼, about 8 minutes. Serve over brisket.
