2 c tomatoes, quartered
1 big can chickpeas
1 medium to large butternut squash
2 large white onions
1/2 green pepper, diced
1 1/2 c white wine
12 cloves of garlic (can add less if you're not a huge garlic fan; garlic is roasted so taste is not too strong)
1 bay leaf, crushed
2 tsp salt
1 tsp paprika
1 c montery jack cheese
1 c parmasan cheese or romano cheese, grated
2 c half and half whipping cream
1) Place veggies, wine, garlic, bay leaf, salt, paprika in large dutch oven. Cover with lid.
2) Bake for 1 hr at 375 degrees.
3) Remove from oven. Stir in cheeses and cream. Lower heat to 325 degrees. Cover, continue baking for 10-15 min.
4) Remove from oven. Blend in food processor.
