Spinach Salad

Serves: 4-6

Preparation time:

Ingredients

1 bag washed baby spinach, 1/2 c. sliced mushrooms, 2 hard boiled eggs minced, 1/4 lb. bacon fried crisp (1 tsp. grease reserved), 1 small red onion thinly sliced, 1/2 c. grated cheddar cheese.

Dressing: 3/4 c. Miracle Whip, 2 tsp. white sugar, 2 tsp. white vinegar, 1 Tbsp. frozen orange juice concentrate, 1 tsp. bacon grease, pinch mustard powder, S+P to taste

Method

Combine all dressing ingredients and allow to sit in fridge for at least an hour so flavors can meld.

To prepare salad, toss spinach, onion, and mushrooms together. Divide into individual salad plates. Top with eggs and cheese. Add generous amount of dressing and top with crumbled bacon.
Mandarine orange slices, strawberries, and almond slivers are also good additions to the top of the salad.
