SAUSAGE AND PEPPER MEDLEY

Ingredients

8 links (1 pound) turkey sausage
3 medium unpeeled russet potatoes, cubed (about 3 cups)
1 medium yellow onion, thinly sliced (about 1 cup)
1 medium red bell pepper, cut into thin strips (about 1 cup)
1 medium green bell pepper, cut into thin strips (about1 cup)
1 clove garlic, minced
1 tablespoon fresh thyme or 1 teaspoon dried thyme

Method

Preheat oven to 400 degrees. In a large skillet, cook sausage over medium heat, turning frequently, until browned, about 15 minutes. Drain off fat from skillet. Pat sausages with paper towels. Set aside. In a large bowl, combine potatoes, red bell pepper, green bell pepper, garlic and thyme. Mix well. Place sausage in a 13” x 9” baking dish. Add the vegetable mixture to baking dish. Toss to combine. Bake until vegetables are tender and sausage is cooked through and no longer pink when pierced with a tip of a knife, about 20 minutes. Drain off fat, from dish. Serve immediately
