Chop the vegetables into little tiny bits and sauté them in oil (the mushrooms needing more time than the green onions, and the red peppers needing almost no time at all). Fry up the bacon and tear it into tiny pieces. Mix all of this into a pie pan, using the residual oil to grease it.
In a large bowl, mix the eggs, milk, Bisquick, salt and pepper, beating them with a whisk for over a minute. Then crumble the goat cheese into the mix and beat it for another minute.
Pour the resulting mix into the pie pan with the bacon and vegetables and then stick all of that into an oven preheated to 400 degrees. Cook for 30-35 minutes.
This recipe can also be used to make CUPQUICHES. Simply follow the instructions up to baking time, then pour your ingredients into a MUFFIN TIN instead of a pie pan. Keep a close eye on that muffin tin, though. Cupquiches take far less time to cook (maybe 20 minutes).
