1. Take a roasting pan that's at least 5 cm high on the sides, and take doubled sheets of tin foil to cover the inside of the pan. In a bowl, place pork chops, hoisin, sweet chilli sauce, soya and a tsp of ground pepper. Mix it around untill everything is well coated.
2. Peel the ginger and slice thinly into discs. Place the pork chops in the foil-lined pan, and scatter the ginger over them. Pour the remaining sauce over the ginger so they don't burn.
3. Place in oven and cook for 20 minutes, then flip the chops over. Cook for another 20 min. The end result should be, dark red and brown glossy, sticky chops, with little charred bits here and there. Those bits are the tastiest, so don't be afraid to let it charr a bit in the oven.
Serve with rice and steamed greens.
