vegan tofu salad sandwich

it's delicious and uses tofu instead of eggs!

Ingredients

4 tablespoons nayonaise or vegenaise ("mayo")
1 container firm tofu, mashed
1/2 teaspoon distilled vinegar
1 tablespoon salt
1/2 tsp mustard (approximately one mustard packet)
1 tablespoon sugar (adds sweetness though it's optional)

Method

Mash the tofu, and combine everything in a food processor until mixed. chill in the refrigerator for a few hours. serve on bread! so yummy :)
