Lentil Stew

1 bag simple lentils
1/2 bottle of vegetable juice (tomato base)
1 large can diced tomatoes
4 large carrots, peeled and sliced
1/2 a large onion
4 cloves garlic, cfrushed
2 Tbs oil (optional)

Corriander (1/4 tsp)
curry powder (1 Tbs, or to taste)
2 tsp ground cummin
1 heaping tsp turmeric
vegetable boullion


Saute onions and carrots in a little bit of oil. Add rest of ingredients except the salt/boullion, and let simmer on stove until lentils are tooth tender. Alternatively, for a no fat recipe, just throw them in the pot with the tomato juice and the rest of the ingredients.

Add the salt/bouillion last to avoid tough lentils. Garnish with cilantro.
