Potatoes Chinese Style with Chilli

A different way of serving potatoes

Ingredients

4 potatoes, peeled and cut into bite sized piece
3 scallions, sliced
1 chilli seeded and sliced
2 tbs sunflower oil
1tbs sesame oil
2 garlic cloves, crushed
14oz can red kidney beans
2 tbsp soy sauce
seasoning
1 tbsp sesame seeds
chopped parsley

Method

Boil potatoes until just tender. Drain ans reserve
In wok fry scallions and chilli in sunflower oil for 1 min then add garlic for a few seconds.
Add drained beans and potatoes to wok. Stir. Add soy sauce and sesame oil. Season and heat through.
Serve sprinkled with sesame seeds and parsley.
