My Favorite Potato Salad

Good in the summer with BBQ food or on a cold plate for dinner

Ingredients

4 cups potatoes, cooked, cooled, peeled & cubed
1 cup Salad Dressing (Miracle whip Type)
1 tsp Mustard
1 tsp Vinegar
1 to 2 hard boiled, cool & chopped, eggs
1/2 cup onion, chopped fine
1/2 cup celery, chopped in sm pieces
1/2 cup sweet pickles chopped (sweet green relish
is fine also to use)

Method

Boil potatoes before hand for 20 mins in lightly slated water until tender. Do not boil too long or they will become mushy and fall apart easily. Cool, peel them and cube them into a large salad bowl.

Mix together dressing, mustard, vinegar. salt & pepper in a smaller bowl. Pour over potatoes and mix gently to coat well.
Fold in chopped egg, celery, onion & pickles or relish. Refrigerate until serving. (Keeps well in fridge for 3 to 4 days)
*Can use Yukon Gold Potatoes for a nice yellow color or even 1/2 white & 1/2 Yukon for interesting color. Can also use red onion for more color.
