300g dark chocolate, chopped coarsly
50g unsalted butter
1tablespoon irish cream liqueur
3 eggs, separated
1/4 cup(55g) caster sugar
300ml thickened cream, whipped
I. Combine chocolate & butter in saucepan over low heat untill smooth. remove from heat.
II. Stir in egg yolks(1 at a time), then liqueur. Transfer mixture to a large bowl & let it cool.
III. Beat egg whites in small bowl untill peaks form. Gradualy add sugar untill it dissolves.
IV. fold cream into chocolate mixture, then fold in egg white mixture in 2 batches.
V. Divide the chocolate mousse into serving cups then refrigerate 2 hours to set! Bon Apetit!
