Mom's indian style beef cutlets

The easiest meatiest cutlets ever but you got to get your hands dirty. You can substitute the beef with any other meat if you want - fish makes good cutlets too.

Ingredients

2lbs lean beef, 1 large onion, 1/2 bunch of coriander, 4 small chillies, 6 slices of bread, turmeric, salt, chilli powder, ginger or ginger paste, bread crumbs and 2 eggs.

This recipe usually makes around 50 cutlets. You can cut this recipe in half if you want to only make 25 cutlets.

Method

Slice onion and chillis and coriander into small pieces. Do not puree in a food processor!. Put in a large bowl. Add defrosted beef into the bowl. Add 1 tbsp of turmeric, 1.5 tsp of ginger paste or 1.5 inches of cut fresh ginger salt and chilli powder to taste. Now wash your hands and put them into the bowl and mix with you hands until you get into a smooth thick consistency. Soak the bread slices in water and squeeze the water out and then add the bread slices into the bowl and continue to mix thoroughly ( the bread slices add consistency and holds the mixture together) with your hands. Wash hands again and then fashion the mixture into small balls. Flatten slightly on the top and arrange onto a baking sheet . Cover with plastic wrap and refrigerate overnight. Making them cold helps to prevent them from falling apart when you deep fry them. When ready to fry dip these cutlets in egg and breadcrumps and deep fry in oil. You can filter the oil after each use using a tea strainer to remove sediment and re use the oil. Use fresh oil between batches if sediment gets excessive. Place fried cutlets between paper towels to remove excess oil and then eat fresh or freeze for later use. This recipe typically makes 50 so its worth the initial time investment !.
