Lime Curd

For Sara (you can change it to lemon if you wish)

Serves: makes 1 jar (350ml)

Preparation time:

75g unsalted butter
3 large eggs
75g caster sugar
125ml lime juice (approx 4 limes worth)
zest of 1 lime


Melt the butter in a heavy based saucepan. Then add all of the other ingredients and whisk over a gentle heat until it looks like thick custard.

Allow it to cool before decanting into a jar.

Keep it in the fridge and enjoy as soon as possible.
