150g dried pasta - fusilli works well (cook according to the packet instructions)
50ml olive oil
juice and zest of a lime
tablespoon of jalapeno peppers, finely chopped (I use the ones in the jar)
100g soft goats' cheese, roughly chopped
3-4 handfuls of rocket
grated parmesan (optional)
While the pasta is cooking, mix the olive oil with the juice and zest of the lime, the jalapenos and some black pepper (to season to your taste).
Once the pasta is cooked, drain and stir in the olive oil mixture, add the rocket and mix well and finally stir in the goats' cheese.
Serve immediately, topped with parmesan and black pepper.
