Apple Crumble Cake

Creamy apple blend between layers of spice cake and topped with a sweet crumble.

Ingredients

Apple Blend-
4 cups chopped apples
1 cup water
2 tbsp lemon juice
1 1/4 cup sugar
1/3 cup cornstartch

Spice Cake-
1 cup butter
1 cup sugar
2 med. eggs
1 cup milk
1 tsp vanilla
1 tbsp baking powder
1 tsp salt
1 tsp cinnamon
1/4 tsp mace
3 cups flour

Topping-
1/2 cup brown sugar
1/2 cup flour
1/4 cup butter
1/2 cut walnuts

Method

Apple blend- Peel, core and chop apples. Put in pot, add water. Bring to a simmer then add lemon juice and sugar. Stir then add cornstarch, let cook until it thickens. Let cool.

Spice Cake- Mix butter and sugar together. Add the eggs and vanilla, continue mixing. Now add milk, spices, and salt, mix. then add your flour and baking powder, stir into batter. Try not to over mix at this stage.

Crumble- In a bowl put your brown sugar, flour and butter. Mix with a fork until crumbly.

Place half the batter in a 9" x 13" x 2" rectangular baking dish. Now add your cooled Apple blend. Cover with the rest of the batter. Add crumble to the top.

Bake at 350 F for 30 min, or until cake batter is cooked (Stick batter with a toothpick if it comes out clean you are good!) This dessert is really tasty served warm. Store left-over cake in the refrigerater in airtight container.
