Winter Salad

Great relish or with a meal


2 lbs onions
1 small cabbage
2 cucumbers
17 green tomatoes (can use 2 small to make one big)
1 big green pepper
1 red pepper
1 cauliflower
1 cup of salt
Chop vegetables to bite size pieces then cover with water add salt, let sit overnight. Next morning, drain and rinse with cold water then let stand 10-20 minutes to fully drain dry.



5 cups of white sugar 1 cup flour
1 tbsp turmeric
4 cups vinegar
4 cups of water
8 tsp dry mustard

Put syrup in pot .Put at medium heat and simmer till thick enough, Take all the vegetables and add to the pot of syrup. Cover and let simmer for about 15 min. Check for crunchy to taste .If want more softer let cook a little longer (will cook a little more when in bottle because of hot packaging to store and seal them) place in sterilized jars
