1/2 cup dry breadcrumbs (Italian are great)
1/4 cup + 2 Tbsp grated parmesan cheese
2 Tbsp minced parsley
1/2 tsp salt
1/2 tsp pepper
6 chicken breast halves
1/4 cup milk
1/4 cup butter, melted
1 small clove garlic, crushed
1/4 cup lemon juice
- Pre-heat oven to 350° F.
- Combine breadcrumbs, parmesan cheese, & parsley in a shallow dish (i.e. a pie tin). Place milk in a separate shallow bowl.
- Dip each piece of chicken in milk, then dredge in breadcrumb mixture. Arrange in lightly greased 9x13" baking dish.
- Combine butter, garlic, & lemon juice. Drizzle over chicken. Sprinkle with paprika.
- Bake uncovered at 350° F for 40 minutes or until tender.
