Low Fat Potato Bacon Soup

This recipe is made with 1% milk, fat free sour cream, and turkey bacon but still tastes like creamy comfort food!

Ingredients

5 med potatoes - cooked
1 tsp olive oil
5 slices of turkey bacon
1 large onion
2 cloves of garlic - minced
1/2 tsp salt
1 bay leaf
2 cups 1% milk
1/2 tsp of black pepper
1 cup of fat free chicken broth
4 oz fat free sour cream
chopped fresh parsley (optional)

Method

Partially mash potatoes, including skins, set aside.

In a large pot or Dutch oven, cook bacon, onion and garlic in olive oil for a few minutes. Add salt and bay leaf and saute 1 minute. Add potato, milk, pepper and broth; bring to a boil. Reduce heat and simmer 15 minutes. Stir in sour cream and parsey, discard bay leaf. Can be topped with green onions and/or low fat cheddar cheese.
