-1 can stewed tomatoes (19 oz.), undrained
- 1/2 cup olives, sliced
- 1 cup green pepper, chopped
- 1/2 tsp. dried thyme
- 1/4 tsp. oregano
- pinch of black pepper
- 6 pork chops
- rice, for serving
In a wide saucepan, heat tomatoes with olives, green pepper, thyme, oregano and black pepper. Add pork chops. Cover and simmer, 30 minutes. Turn once.
Meanwhile, prepare rice according to package directions.
Serve pork chops and sauce over rice.
