Chicken Broccoli Casserole

Ingredients

8 oz broccoli (1-2 heads, cut up)
1 c mayo
3 c cubed, cooked chicken
2 cans cream of chicken soup
1 t lemon juice
1 c shredded cheddar
4 c cooked rice (cooked in chicken stock)

Method

combine mayo, soup & lemon juice. Spread small amount in base of 9x13 dish. Top with rice, chicken, broccoli, and remainder of mixture, spreading evenly & sealing edges. Bake at 350º 1 hour until hot & bubbly. Sprinkle with cheese and bake another 5-10 min.
(Original recipie calls for steamed broccoli, but I never bother--it cooks well enough. But you can use frozen as well.)
