1/2 Can of Refried Beans
1 Tblsp Oil
1 Onion halved and sliced
2-3 cloves of garlic minced
1 birds-eye chilli (des-seeded if you can't handle the heat or omit altogether and just use a bit cayenne)
2 capsicums/ bell peppers (multi-coloured) and sliced into strips
~1 tsp cumin
~1/2 tsp cayenne
~1 tsp ground corriander
1 can of tomatoes
1/2 tsp sugar (unless your tomatoes already contain sugar)
Avacado and chopped green onions (or if you are like my husband, then sour cream and cheese)
Pre-heat oven to ~ 150 C.
Fry onion in oil for 2 min, add capsicum and continue for 3 min, add garlic, chill and spices until fragrant and then add tomatoes and sugar. Reduce for a further 5 min or so. Spread tortillas with refried beans and spoon capsicum/tomato mixture on top. Wrap and place on a tray in the oven (can also sprinkle cheese over top) until crispy edges. Serve with chopped green onions and fresh avacado slices.
