Seared Macadamia Crusted Tuna

This is one of my favourite recipes, adaptated from one I had at Longhi's restaurant in Maui.

Ingredients

Sushi Grade Ahi Tuna steaks (needs to be v. fresh)
Soy Sauce
Macademia nuts
Bread Crumbs
Sea salt + Pepper

Method

Crush macademia nuts coarsely with salt pepper, and bread crumbs

Dip tuna steaks in soy sauce and press nut crust into the tuna on both sides

Sear in oil on medium high, until both sides are cooked but raw in the middle. The fish continues to cook on both sides after you take it off. Don't over cook it!

Slice and serve with dabs of wasabi.
