Smashed Potato Salad

An easy way to get veggies into little ones. Can be served warm or cold.

Ingredients

8 large potatoes peeled and chopped into small cubes
1 cup of matchstick or shredded carrots
2 celery stalks finely chopped
½ green pepper finely chopped
1 cup of shredded cheese
¼ cup of 4 cheese ranch dressing
2 tbsp of miracle whip
Salt and pepper to taste

Method

Fill large pot with cubed potatoes and top with water until all potatoes are covered. Bring to a boil, add 2 tbsp of salt to flavour, cook until potatoes are soft when poked with a fork. Drain potatoes and place into a large mixing bowl, add cheese and stir. Mash with potato masher until there are only small lumps. Add carrots, celery, peppers, four cheese salad dressing and miracle whip; mix well. Add more four cheese dressing if not moist enough. Season with pepper.

Can be served warm or cold.

Serves 8 people.
