Mmmm Mushroom Soup

Use many different kinds of mushrooms to make this a magical culinary experience.

Ingredients

3 lbs of mushrooms -go crazy with the mushrooms. Use all different kinds. They all taste yummy. But if you're short on cash then use the cheapest kind and maybe fork up the money for a couple portabellos.

1 stick of butter (or a cup of olive oil, butter tastes better though)

1 cup Marsala cooking wine

6 cups vegetable stock (i buy whatever is on sale at Wholefoods)

2 Tablespoons Thyme (or use sprigs but if you don't puree the hell out of it someone might choke!)


Method

Heat butter until it bubbles (for oil sizzles)

put all the mushrooms in, stir fry for a while

add cooking wine: boil

add vegetable stock: boil

simmer for a bit, and then puree (use the immersion blender for god's sake, the blender is too dangerous i tell ya.)

enjoy.
