Tropical Teacakes

A modified muffin recipe from Vegetarian Times.

Ingredients

1 c. all-purpose flour
1 c. whole wheat flour
1 c. sugar
1 t. baking soda
1 c. unsweetened/natural applesauce
1/2 c. canola oil (shy)
1 t. vanilla extract
1/4 c. soymilk (or milk)
1 c. mashed ripe bananas
6 oz. (1 c.) chocolate chips (or vegan equivalent)
1/2 c. chopped pecans

Method

1. Preheat oven to 350F. Line 18 muffin cups with paper liners. Whisk together flours, sugar and baking soda in large bowl. Combine applesauce, oil and vanilla in separate bowl. Fold applesauce mixture into flour mixture. Stir in soymilk and bananas. Fold in chocolate and nuts.
2. Fill muffin cups 2/3 full with batter. Bake 25-30 minutes, or until toothpick inserted in center comes out clean. Let stand 10 minutes, then unmold and cool.

Best served warm (gooey chocolate).
