African peanut-pork stew from Nigeria

A very yummy dish. Try it!

Ingredients

600g pork
2 medium sized onions
2 tbs peanut oil
175g peanut butter
dash of black pepper
dash of cayenne pepper
dash of salt
1 small can of diced tomatoes
300 ml beef broth
chopped parsley
3 slices of fresh lemon
1 tbs cumin
brown rice

Method

Heat up water for rice.

chop the onions finely, cut the pork into thin stripes. Heat peanut oil in a skillet. Fry the pork in portions and set aside.

Fry the onions in the rest of the oil until light brown. Now add the peanut butter, salt, pepper, red pepper, and cumin. Stir until peanut butter softened. Now add the tomatoes with the juice.

Add the beef broth and bring to a boil. Place the pork back into the skillet and let simmer on medium hight for 40 min.

Add the chopped parsley. and garnish with the lemon slices.

The original recipe says to serve the brown rice with the stew, I however, mix it with the stew before i serve it. I also don't use lemon slices
