2 TBS unsalted butter
5 TBS sugar
2 Granny Smith Apples, cored and peeled
2/3 C flour
1/2 TP cinnamon
1 TBS lemon juice, could use vanilla or apple juice instead
1/4 C brown sugar
1/2 TP salt, if desired
3 LRG eggs
3/4 C milk
Confectioners' sugar for dusting, if desired
Chocolate syrup to drizzle, if desired
-->Preheat oven 450.
-->Butter muffin tin, 6 large ones and sprinkle with sugar
-->Slice apples into bits and toss in brown sugar, lemon juice or sub, and cinnamon
-->Saute apples for 10-15 mins till caramelized
-->Let cool for 5mins
-->Divide apples, once cooled into muffin cups
-->Combine flour, sugar, salt, butter, eggs and milk for about 3 mins
-->Pour batter over apples.
-->Reduce heat to 400
-->Bake for 15mins or until they puff up
-->Remove from tin asap, dust with confectioners sugar, drizzle with chocolate if desired.
