Onion Marmalade

4oz butter
1.5 pounds of onion
1.5 teaspoons salt
5oz caster sugar
7 tablespoons sherry vinegar
9 fl.oz red wine


1. Peel & slice the onions very finely
2. Heat butter in the pan until nut brown
3. Add the sliced onions, salt & sugar
3. Cook slowly until the onions are dark brown (45 minutes)
4. Add the vinegar & red wine
5. Cook for 30 minutes, stirring occassionally
6. When it is mahogany - and butter is bubbling on top
7. Stop cooking & cool slightly
7. Then pour into clean jars or containers;
wait until cold, and put in fridge.
