2 seabass steaks, 2 small tomatoes, 1 red pepper, 1 onion, 20 capers, 1 zucchini, 1 mushroom, salsa, salt and pepper to taste,dash of sugar, olive oil, garlic butter, basil, tarragon, 1/2 cup water.
Prepare salsa separately from fish, by first frying onions and peppers until golden brown in olive oil, next add all other veggies, salt and pepper, salsa and spices, as well as water, simmer for 30mins until thickened. Add basil at end and switch heat off.
Fry seabass in teaspoon olive oil and teaspoon garlic butter, cook as long as desired.
Prepare white rice separately.
Garnish Fish steak with salsa on side, and rice on side, add some green basil leaves for colour.
